Another thing you might do is run the employee through a temp service for 90 days. I did that in a former life for heavy manual labor employees. Worked out great.

Check your state laws. In Oklahoma you can do that, but only with a signed deduction agreement. Ours is a part of the orientation paperwork just to cover this type of situation.

If I understand FLSA, exempt employees can be docked for days not worked in full-day increments only. If they work any portion of a day, they must be paid for the full day. Exception is partial days under a written sick leave plan.
